Experience authentic handmade soba at Echizen soba theme park

This soba-making experience facility, directly operated by a long-established Echizen soba noodle maker, offers soba-making experience and factory tours, as well as a wide range of meals including Echizen grated buckwheat noodles in a spacious environment.

At the “Soba Making Experience Dream Studio,” visitors can try their hand at making soba (buckwheat noodles) and mizuyokan (sweetened water dumplings). The soba-noodle making experience is a popular local gourmet experience, with 15,000 people participating annually.

Fukui is famous for its oroshi soba (buckwheat noodles with grated radish). This refreshing way of eating soba with grated daikon (Japanese radish) in the sauce is a specialty unique to the area. Another attraction is that freshly made soba can be tasted immediately after it is made.

In addition to grated buckwheat noodles, Echizenya also offers a variety of other dishes, such as sauced pork cutlet served on top of a bowl of rice and grilled mackerel sushi.

In addition, at the confectionery studio, homemade mizuyokan and botamochi (rice cakes) made from Hokkaido azuki beans are very popular.

To learn about the history of Echizen soba, we recommend taking a factory tour and visiting the soba museum. Visitors can see the soba production process up close through a free tour pathway.

There, about 200 miniature dolls created by Kazuo Katoh, a local doll artist, are on display, showing the process of making Echizen soba with humorous expressions and gestures.

Also on display are interesting tools and utensils used for soba making in the past.

Visitors can also enjoy original sweets at the soba production and sales shop. The menu includes a variety of tempting items such as buckwheat soft-serve ice cream and mizuyokan (sweetened water dumplings). Souvenirs of Fukui are also available.

Takefu Seimen, the company that operates the soba shop, has extensive farms in Echizen City and Hokkaido, and handles the entire process from soba cultivation to milling, noodle making, and making dipping sauce.

Visitors can explore the history of Echizen soba through factory tours and a soba museum.
